Busy as a bumble bee! [First Podcast Interview! + Recipe]

HELLO my darling friends! It has been quite some time since I’ve posted on my blog. I have been getting very busy with school and a new job!

Since my last post, I have had several Anatomiy & Physiology exams (I passed!), and my late-start Intro to Philosophy course has started (only week 1 and my brain already hurts!)

I started a job teaching indoor cycling classes and bootcamps with a great start-up called CSS Group Fitness. We rent out a space and teach Monday, Wednesday, and Friday from 6a-10a. The hallmark of the company is the fact that it is mobile fitness, yes! As our truck says, “Our stationary bikes are mobile!” Every morning we unload the truck – bikes, dumbbells, mats, sound and video equipment. This past week was our grand opening week in which we held FREE classes, and it was a great success! We have people of all ages attending – from age 19 to all the way up in the 70’s! I have a great boss, great coworkers, and the people who attend classes are always willing to work their hardest. As with any new business, our soft opening was a bit slow, but hopefully business will only be increasing after this week! :)

Kayla was nice enough to take a video of me instructing…I hope I’m not too scary! hehe :p

I also had an awesome opportunity to have my FIRST  ever podcast interview with Adam and Devon Bate from The Lifestyle Accountability Show! The show centers around individuals who share their motivational tips to help others in developing a healthy lifestyle! :)

In other news…

I finally did double unders!! Just a few – but it’s progress! I’m very proud of myself for finally getting them and look forward to getting better at them :)

I (unofficially) did the open workout yesterday – doing 60 singles instead of double unders since I don’t quite have them down to a science yet. Counting 60 singles as 30 doubles, and doing the 35# bar instead of the requisite 55#, I had a score of 250 + 50 singles. HR was up the entire time, and it felt awesome to work hard and push myself! It only made me more excited to keep improving.

Thanks to the coaches at Crossfit Summa! :) Anyone in that area, I highly recommend their box – great coaches, great members, all-around supportive atmosphere.

Lastly…my birthday is coming up in about 8 days!! (WOOO 21 YEARS OLD!) My mom has so kindly been posting a picture of me every day for a 21-day countdown to the big day. Thanks mom :p In honor of my birthday, it would be the most meaningful gift if you fantastic people would donate to in my name!! I’m hoping to attend the OMG 2014 Summit in Las Vegas, NV in April to meet and connect with other young adult cancer survivors!!

To wrap things up, I’ll post a real quick omelette recipe! I’ve been on such an egg-kick lately, and this is one of my favorites:

Southwest Omelette


  • 2 eggs
  • 1 tbsp egular milk or almond milk
  • Diced tomatoes
  • Diced peppers
  • Diced avocado
  • Diced onions or onion powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • Diced ham or turkey bacon
  • Cheese (optional)
  1. After dicing your ingredints, lightly spray a skillet with cooking spray and set over medium heat.
  2. Whisk eggs, spices, and milk – add other ingredints and stir.
  3. Pour ingredients into pan. Gently push edges in towards the middle – let egg simmer until it starts to bubble a little bit on top, and doesn’t move around when you move the pan. Add your optional cheese to 1/2 of the omelette, and fold over.
  4. Carefully flip the omelette over and cook briefly on the other side. Bon appetit! :)
