I am loving this beautiful weather today!! This morning I did one of those things where you wake up on time, then you blink and it’s already the time you were supposed to leave. Ever have that? Good thing my workout buddy and best friend is just ever so forgiving. So I got to the gym and we did the hamstring workout from the Transformation Workout Plan for Week 2. killler. After the gym, I planned on going on a run outdoors since it was so so nice out!!
I aimed to run at least 3 miles, but I ended up doing 5!! So proud of myself – it’s unbelievable how capable a person is of doing something unless they actually try it and set their mind to it.
I was proud of myself for keeping my pace steady and consistent through the whole run. It wasn’t too hot out and wasn’t too cold – and the sky is so so blue! MapMyRun has a feature where you can see the pace of each mile you ran:
Now, on to what I ate wednesday :)
Let’s start with a dinner my mom made the other night for her and my 10 year old brother. I have them eating clean as well, and they just started doing the Couch to 5k program. Here, my mom used a rotisserie chicken breast from the grocery store, cubed, and mixed with two different kinds of salsa, plain greek yogurt, cumin, chili powder, onion and garlic powder, paprika, and some mixed veggies & santa fe vegetable blend. Umm, it was delicious!! Sometimes I don’t really like the concoctions my mom comes up with when she pulls an ‘everything but the kitchen sink’ dinner, but this was so yummy!!
Next we have one of the dinners I’ve been eating inspired by the Transformation Meal Plan. Here we have some lean eye round beef, broccoli, and brown rice
Check out these funky peaches my mom got from Trader Joe’s! They’re called saturn peaches – they taste a little bit different than normal peaches but they’re so good!
Here’s yesterday’s post-workout snack – Fage greek yogurt, raspberries & blackberries, granola, and a drizzle of honey
So every August, there is a big music and arts festival all throughout the entire town of Bethlehem, so cleverly named Musikfest. It’s known for having an annual mug that people can continually fill with the alcoholic beverage of their choice and then walk around drunk all night. It’s also known for great music, food, and vendors in an area called Handwerdplatz. There are tents selling homemade soap, salsa, found-art decorations, etc. Kayla and I bought this delicious marinade/finishing sauce from Bittersweet Herb Farm – sundried tomato and olive. For only 40 calories per serving, it is too good to be true! The other day for a snack, I mixed a Laughing Cow cheese wedge with some of the finishing sauce and dipped carrot chips in it :)
With school coming up, I had to figure out a way to organize my meals so they are easy to transport and readily available. I bought a salad container with a detachable ice pack and a little dressing compartment, and it has its own flatware. I also bought little containers perfect for my snack-size portions. Here’s some food I prepped the other day when I knew I’d be out all day:
Finally, here is today’s post workout/run snack! A cinnamon roll Quest Bar microwaved with a Laughing Cow cinnamon cream cheese wedge spread on it, and an iced hazlenut macchiato :)
